- 4 tsp Olive Oil
- 6-7 Garlic cloves (minced)
- 1 Medium onion (finely chopped)
- 1 Carrot (grated)
- 2 Tomatoes (blended to a pulp)
- 2 tsp Dried basil
- 1 tsp Dried parsley
- Salt & Black pepper to taste
- 1 Medium eggplant
- 1 Zucchini
- 2-3 Fresh tomatoes
Method:
- Thinly slice eggplants, zucchini, and tomatoes. Preheat oven to 300°C.
- In a saucepan, heat olive oil, and sauté garlic and onions until soft. Add grated carrot and mix well.
- Add tomato pulp, dried parsley, and basil. Season with salt and pepper, cover, and cook until tomatoes are fully cooked.
- Transfer the sauce to a greased baking dish, leaving a few spoons for topping. Arrange sliced vegetables in a circular pattern over the sauce.
- Brush remaining sauce over vegetables, season, brush with olive oil, cover, and bake for 30 minutes. Uncover and bake for an additional 5-10 minutes until slightly colored and crunchy.
- Serve immediately while spreading onto fresh bread or in desi style like with chapati.

- 2 Eggplants (thinly sliced)
- Salt to taste
- 4 Medium potatoes (3 peeled and thinly sliced, 1 finely chopped)
- 2 Zucchini (thinly sliced)
- 2 tbsp Extra Virgin Olive Oil
- 2/3 cup Maida
- ¼ tsp Nutmeg
- 4 cups Warm milk
- 2 Whole eggs
- 4-5 Garlic cloves (minced)
- 1 ¼ cups Cooked black urad dal
- Pulp of 2 tomatoes
- ½ cup Broth or water
- 1 tsp Dried oregano
- ½ tsp Nutmeg
- 1 pinch Cinnamon powder
- ½ cup Parmesan (grated)
Method:
- Preheat oven to 400°C, sprinkle salt on eggplant slices, and let rest for 20-30 minutes.
- In a saucepan, heat olive oil, add maida, salt, and pepper while gradually adding warm milk and stirring to prevent lumps.
- Add nutmeg and whisk eggs with a small amount of bechamel sauce. In another pot, heat olive oil, add chopped onions and garlic, and cook briefly.
- Add tomato pulp, salt, pepper, oregano, nutmeg, and cinnamon while adding cooked lentils and simmer and placing eggplant and zucchini on a baking pan.
- Drizzle with olive oil, bake for 15-20 minutes, and layer the remaining lentil sauce and vegetables before topping with bechamel sauce, and Parmesan.
- Bake until golden brown and enjoy with fresh bread, Greek salad, spinach pie, or homemade chapati.

- Take 1 Medium eggplant
- Salt to taste
- 5 tsp Olive oil
- 2 tbsp Lemon juice
- 4-5 Garlic cloves

Method:

- 1 Large eggplant
- 4-5 Basil leaves (chopped)
- 1 tsp Dried oregano
